Ingredients
4 Chicken Breasts1/4 cup chicken broth1 tablespoon olive oil1-1/2 tablespoons butterSalt and Pepper to taste3 tablespoons chopped onion1/2 lemon, juice only2 teaspoons Dijon mustard2 tbsp. Port Wine2 tsp. PaprikaDirections
Flatten chicken breasts to 1/4-inch thickness. Sprinkle with salt and pepper.
Heat 1 tablespoon each oil and butter in a large nonstick skillet to high. Saute chicken 4 minutes per side or until tender. Remove chicken to serving platter; keep warm.
Add green onions, lemon juice, parsley and mustard to skillet; cook and stir 15 seconds. Add chicken broth, Port wine, remaining butter and stir until smooth.
Pour sauce over chicken. Garnish with lemon wedges and sprigs paprika. Serve with rice or rice pilaf
