Ingredients
1 tbsp. olive oil2 pounds ground chicken or turkey1 cup long grain rice*2 tsp. ground cumin2 tsp. ground coriander1 tsp. ground turmeric1 tsp. ground cayenne pepper1 quart chicken stock2 cans garbanzo beans (chickpeas), drained and rinsed2 cans black beans, drained and rinsedI tbsp. sugarsalt and pepper to tasteDirections
Dice chicken into bite size pieces
First cook rice with garlic, coriander, cayenne pepper, sugar and tumeric in chicken stock. Bring mix to a boil. Reduce heat to low, cover, and simmer 20 minutes.
Saute the chicken in olive oil over medium heat until evenly brown.
Mix cooked chicken, garbanzo beans, black beans into the cooked rice. Season with salt and pepper.
Center on a large serving dish and serve.
